1 lb ground beef or turkey

1 cup chopped onions

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked quinoa or rice

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

1 cup shredded cheddar cheese

1 cup sour cream

1 small lime, juiced

Salt and pepper to taste

Fresh cilantro for garnish (optional)

1 cup tortilla chips, crushed (for topping)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Drain excess fat.

      Sauté Vegetables: Add chopped onions and minced garlic to the skillet with the meat. Sauté until onions are translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the cooked meat mixture with black beans, corn, diced tomatoes with green chilies, cooked quinoa or rice, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Mix well.

          Assemble the Casserole: Spread half of the meat mixture into a greased 9x13-inch baking dish. Layer half of the shredded cheddar cheese on top. Spread the remaining meat mixture and top with the remaining cheese and crushed tortilla chips.

            Add the Sour Cream: Dab the sour cream in small spoonfuls across the top of the casserole for added creaminess.

              Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once removed from the oven, let it sit for 5-10 minutes before serving. Garnish with fresh cilantro if desired.
