2 cups cooked chicken, shredded

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup salsa

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

10 small flour or corn tortillas

Cooking spray or olive oil

Fresh cilantro or green onions, for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix until all ingredients are well combined and creamy.

      Warm the Tortillas: If using corn tortillas, warm them in a skillet over medium heat for about 30 seconds on each side, or until pliable. For flour tortillas, you can skip this step.

        Assemble the Taquitos: Place about 2 tablespoons of the chicken filling in the center of each tortilla. Roll tightly, starting from one end, and secure the end with a toothpick if necessary.

          Arrange on Baking Sheet: Place the rolled taquitos seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with olive oil to help them crisp up while baking.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.

              Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro or green onions if desired. Serve with extra salsa, guacamole, or sour cream for dipping.
