Ingredients

2 ripe avocados, pitted and peeled

1/4 cup Greek yogurt (or sour cream for a richer taste)

2 tablespoons lime juice

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper to taste

4 cups green cabbage, finely shredded

1 cup carrots, julienned or grated

1/2 cup fresh cilantro, finely chopped

1/4 cup red onion, thinly sliced

Optional: Sliced jalapeños for a spicy kick

Instructions

In a medium mixing bowl, mash the ripe avocados with a fork until smooth but still slightly chunky.

Add the Greek yogurt, lime juice, honey, garlic powder, ground cumin, and a pinch of salt and pepper. Mix until well combined and creamy. Taste and adjust seasoning if necessary.

In a large bowl, combine the shredded cabbage, carrots, chopped cilantro, and red onion.

Pour the avocado dressing over the slaw ingredients, and toss gently until everything is well coated. Be careful not to mash the avocado too much while mixing.

If you like heat, add sliced jalapeños to the slaw and toss again.

Let the slaw sit for at least 15-20 minutes to allow the flavors to meld and the cabbage to soften slightly.

Serve chilled or at room temperature as a refreshing side dish or topping for tacos and sandwiches.
