Creamy Avocado Pasta with Lemon

12 oz spaghetti or linguine

1 ripe avocado, halved and pitted

1/4 cup fresh basil leaves

2 cloves garlic, minced

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

1/4 cup extra virgin olive oil

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Cherry tomatoes, halved (for garnish)

Extra basil leaves, for garnish

Crushed red pepper flakes (optional, for a kick)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Once boiling, add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

    Prepare the Avocado Sauce: In a food processor or blender, combine the avocado flesh, basil leaves, minced garlic, lemon juice, lemon zest, olive oil, salt, and black pepper. Blend until the mixture is smooth and creamy. If the sauce is too thick, add some of the reserved pasta water, a tablespoon at a time, until you achieve the desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta and the avocado sauce. Toss gently to coat the pasta evenly. If the sauce needs to be thinned out more, slowly mix in additional reserved pasta water.

        Serve: Plate the avocado pasta and sprinkle grated Parmesan cheese on top (if using). Garnish with halved cherry tomatoes and additional basil leaves. For a touch of heat, sprinkle crushed red pepper flakes.
