12 oz penne pasta

1 lb Italian sausage (mild or spicy, casings removed)

2 cups fresh baby spinach

3 cups ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups marinara sauce

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh basil, chopped (for garnish)

Olive oil for sautéing

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Cook the sausage: In a large skillet over medium heat, add a drizzle of olive oil. Add the Italian sausage, breaking it up with a spoon. Sauté for about 5-7 minutes, until browned and cooked through. Add the minced garlic and red pepper flakes (if using) and cook for an additional minute until fragrant.

        Add spinach: Stir in the fresh spinach, cooking until wilted, about 2-3 minutes. Remove from heat.

          Mix the sauces: In a large mixing bowl, combine the ricotta cheese, marinara sauce, dried oregano, and cooked sausage mixture. Season with salt and pepper to taste.

            Combine pasta and sauce: Add the cooked penne to the bowl with the sauce mixture and stir well to combine, ensuring the pasta is evenly coated.
