Creamy Balsamic Mushroom Chicken Pasta

8 oz fettuccine or pasta of choice

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

8 oz mushrooms, sliced (cremini or button)

3 cloves garlic, minced

½ cup balsamic vinegar

1 cup heavy cream

½ cup grated Parmesan cheese

2 cups fresh spinach

1 tablespoon fresh thyme, chopped (or 1 tsp dried thyme)

Fresh basil for garnish

Additional Parmesan cheese for serving, if desired

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with garlic powder, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.

      Cook Mushrooms: In the same skillet, add the sliced mushrooms and sauté for about 4-5 minutes until they begin to soften. Add the minced garlic and cook for another minute until fragrant.

        Add Balsamic Vinegar: Carefully pour in the balsamic vinegar, scraping any browned bits from the bottom of the skillet. Allow the vinegar to simmer for about 2-3 minutes until slightly reduced.

          Make the Cream Sauce: Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese, mixing until smooth. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

            Combine Ingredients: Add the cooked chicken and spinach to the sauce, stirring to combine everything. Cook until the spinach has wilted and everything is heated through, about 2-3 minutes.

              Toss with Pasta: Add the cooked pasta to the skillet and toss to coat the pasta in the creamy balsamic sauce. Stir in fresh thyme and adjust seasoning with salt and pepper if needed.

                Serve: Divide the creamy balsamic mushroom chicken pasta among serving plates. Garnish with fresh basil and an additional sprinkle of Parmesan cheese.
