Creamy Basil Pesto Chicken

4 boneless, skinless chicken breasts

1 cup fresh basil leaves

1/2 cup pine nuts

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1/4 cup olive oil

Salt and pepper to taste

1 tablespoon lemon juice

1 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Make the Pesto: In a food processor, combine the fresh basil leaves, pine nuts, minced garlic, and Parmesan cheese. Pulse until finely chopped.

    With the food processor running, slowly drizzle in the olive oil until the mixture becomes a smooth paste. If necessary, scrape down the sides. Add heavy cream, lemon juice, salt, and pepper to taste, and pulse to combine. Set aside.

      Prepare the Chicken: Season the chicken breasts with salt, pepper, and red pepper flakes, if using.

        Cook the Chicken: Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, add the chicken breasts, cooking for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from skillet and set aside.

          Combine Chicken and Pesto: In the same skillet (lower the heat if necessary), add the creamy pesto sauce and bring it to a gentle simmer. Return the cooked chicken to the skillet and coat it in the sauce, allowing it to heat through (about 3-4 minutes).

            Serve: Plate the chicken, draping the creamy basil pesto over the top. Garnish with fresh basil leaves and additional Parmesan cheese if desired. Serve warm with a side of pasta, rice, or a fresh salad.
