Creamy Broccoli Cheddar Pasta

8 oz (225 g) pasta of your choice (penne or fusilli work great)

2 cups broccoli florets (fresh or frozen)

2 cups sharp cheddar cheese, grated

1 cup whole milk or heavy cream

2 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the remaining water and set the pasta aside.

    Blanch the Broccoli: In the same pot of boiling water, add the broccoli florets and blanch for about 2-3 minutes until bright green and slightly tender. Remove the broccoli with a slotted spoon and set it aside.

      Make the Creamy Sauce: In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the onion powder, garlic powder, salt, pepper, and red pepper flakes (if using).

        Combine Ingredients: Lower the heat and pour in the whole milk (or heavy cream), stirring to combine. Gradually add the grated cheddar cheese, continuously stirring until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

          Mix It All Together: Add the drained pasta and blanched broccoli to the skillet, tossing everything together until well coated with the creamy cheese sauce.

            Serve: Serve immediately, garnished with freshly chopped parsley for a burst of color and flavor.
