Creamy Broccoli Cheese Soup

1 lb fresh broccoli, chopped (or 4 cups frozen broccoli)

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk or heavy cream

2 cups shredded cheddar cheese (sharp for more flavor)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

½ teaspoon garlic powder

½ teaspoon onion powder

Pinch of nutmeg (optional)

Croutons and additional cheese for garnish (optional)

Instructions
 

Prepare the Broccoli: If using fresh broccoli, wash and chop it into small florets. If frozen, ensure it's thawed slightly before cooking.

    Sauté Aromatics: In a large pot over medium heat, melt the butter. Add the diced onion and sauté for about 5 minutes, or until softened. Add garlic and sauté for another 1-2 minutes until fragrant.

      Cook the Broccoli: Add the chopped broccoli to the pot, stirring well. Pour in the vegetable broth, bring to a gentle boil, then reduce heat and simmer for about 10-12 minutes, or until the broccoli is tender.

        Create a Roux: In a small bowl, mix the flour with a little of the milk to create a smooth paste. This will help thicken the soup. Set aside.

          Blend for Creaminess: Carefully transfer the broccoli mixture to a blender (or use an immersion blender) and blend until smooth, or leave some chunks for texture, depending on your preference.

            Return to Pot & Thicken: Pour the blended mixture back into the pot. Over low heat, stir in the remaining milk and the roux mixture, whisking continuously until smooth and thickened.

              Add Cheese & Season: Gradually fold in the shredded cheddar cheese until fully melted and incorporated. Season with salt, black pepper, garlic powder, onion powder, and a pinch of nutmeg for depth. Adjust seasoning to taste.

                Serve & Garnish: Ladle the creamy soup into bowls. Top with croutons and a sprinkle of extra cheese if desired. Enjoy while hot!
