1 medium head of cauliflower, cut into florets

2 cups shredded cooked chicken (rotisserie works great!)

1 cup buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup crumbled blue cheese (optional, for the topping)

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

    Prepare Cauliflower: Steam the cauliflower florets in a pot of salted water for about 5-7 minutes or until tender. Drain and set aside.
