Creamy Cajun Sausage Pasta Skillet

12 oz (340g) penne pasta

1 lb (450g) Cajun-style smoked sausage, sliced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 cup chicken broth

2 teaspoons Cajun seasoning

1 cup fresh spinach

1 cup shredded Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced Cajun sausage. Sauté for about 5-7 minutes, or until they are browned and heated through. Remove the sausage from the skillet and set aside.

      Cook the Veggies: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic, and cook for another minute until fragrant.

        Add Tomatoes and Seasoning: Pour in the undrained diced tomatoes and add the Cajun seasoning. Stir well to combine and let it cook for an additional 2-3 minutes to meld the flavors.

          Create the Sauce: Reduce the heat to low and add the chicken broth and heavy cream to the skillet. Stir continuously until the mixture is well blended and slightly thickened, about 3-5 minutes.

            Incorporate Pasta and Sausage: Add the cooked penne pasta and sautéed sausage back to the skillet. Toss everything together, ensuring the pasta is well-coated with the creamy sauce.

              Add Spinach and Cheese: Gently fold in the fresh spinach until wilted, then sprinkle the shredded Parmesan cheese on top. Stir until the cheese is melted and the sauce is creamy.

                Season and Serve: Taste and adjust the seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley.
