Creamy Cauliflower Soup

1 large head of cauliflower, chopped into florets

1 medium onion, diced

3 cloves of garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Optional toppings: crispy bacon, chopped chives, or shredded cheese

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and thyme, and cook for another minute until fragrant.

    Cook the Cauliflower: Add the chopped cauliflower to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the cauliflower is tender.

      Blend the Soup: Using an immersion blender, carefully puree the soup until smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a blender. Remember to allow the soup to cool slightly before blending to avoid splatters.

        Add Cream: Once the soup is smooth, stir in the heavy cream (or coconut cream) until well combined. Allow the soup to heat through, and season with salt and pepper to taste.

          Serve: Ladle the creamy soup into bowls and top with your choice of crispy bacon, chopped chives, or shredded cheese for added flavor and texture.
