8 lasagna noodles

2 cups cooked, shredded chicken breast

1 cup ricotta cheese

1 ½ cups mozzarella cheese, shredded (plus more for topping)

½ cup grated Parmesan cheese

2 cups Alfredo sauce (store-bought or homemade)

1 cup baby spinach, chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles until al dente according to package instructions. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread a thin layer of Alfredo sauce over the bottom of a 9x13-inch baking dish. Take each lasagna noodle, and spoon about 2-3 tablespoons of the chicken and cheese mixture onto one end. Roll the noodle tightly into a cylinder and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.

          Top with Sauce and Cheese: Once all the rolls are in the dish, pour the remaining Alfredo sauce over the top. Sprinkle with the remaining mozzarella cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves if desired before serving.
