Creamy Corn Pasta

12 oz (340g) pasta (fettuccine or penne)

2 cups fresh or frozen corn kernels

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese

1 tbsp olive oil

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional)

2 tbsp fresh basil, chopped (for garnish)

Zest of 1 lemon

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Corn: Add the corn kernels to the skillet and cook for another 4-5 minutes, stirring occasionally until the corn is tender and slightly caramelized.

        Create the Cream Sauce: Pour in the vegetable broth and let it simmer for a couple of minutes. Lower the heat and add the heavy cream to the skillet, stirring well to combine. Bring the mixture to a gentle simmer.

          Incorporate Cheese: Gradually add the grated Parmesan cheese to the creamy mixture, stirring until it melts and the sauce thickens. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

            Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it in the sauce until well coated. Season with salt, black pepper, and red pepper flakes, if using. Stir in the lemon zest to brighten the flavors.

              Serve: Divide the creamy corn pasta among serving plates or bowls. Garnish with fresh basil for added color and flavor. Enjoy your deliciously creamy corn delight!
