Ingredients

8 oz linguine pasta

2 tablespoons unsalted butter

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

Salt and black pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

2 cloves garlic, minced

½ cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 teaspoon Worcestershire sauce

½ cup gruyère cheese, shredded

¼ cup fresh parsley, chopped (for garnish)

Juice of ½ a lime (optional for a zesty kick)

Instructions

Cook the Linguine: In a large pot of salted boiling water, add the linguine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Sauté the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the chicken pieces with salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Add the seasoned chicken to the skillet and sauté for about 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and scraping up any brown bits from the bottom of the skillet. Bring the mixture to a simmer.

Add Cream and Vegetables: Lower the heat and stir in the heavy cream, Worcestershire sauce, cherry tomatoes, and corn. Allow the sauce to simmer for about 5-7 minutes, stirring occasionally, until slightly thickened.

Combine Chicken and Linguine: Return the cooked chicken to the skillet, then add the linguine. Toss everything together, adding reserved pasta water a little at a time to reach desired creaminess.

Finish with Cheese: Sprinkle in the gruyère cheese and stir until melted and well incorporated. Adjust seasoning with salt, pepper, and a squeeze of lime juice for a refreshing zing.

Serve: Plate the creamy cowboy butter chicken linguine and garnish with freshly chopped parsley. Enjoy warm!
