1 can (15 oz) corn kernels, drained

1 medium onion, diced

3 cloves garlic, minced

1-2 jalapeño peppers, seeded and diced (adjust for heat preference)

3 cups low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon oregano

½ teaspoon smoked paprika

1 teaspoon salt (or to taste)

1 teaspoon black pepper

1 cup cream cheese, softened

1 cup dairy or non-dairy milk (for a lighter option)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional toppings: avocado slices, shredded cheese, crushed tortilla chips

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of your crockpot. Layer the white beans, corn, diced onion, and minced garlic over the chicken.

Add Spices: Sprinkle the diced jalapeños, cumin, oregano, smoked paprika, salt, and black pepper evenly over the ingredients in the crockpot.

Add Liquids: Pour the chicken broth over the entire mixture, making sure everything is well combined.

Cook: Cover the crockpot and set it to low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shredded.

Shred Chicken: Once cooked, remove the chicken breasts from the crockpot, shred them with two forks, and return the shredded chicken back to the pot.

Make It Creamy: Stir in the softened cream cheese and milk, mixing until fully incorporated and creamy. Adjust seasoning with lime juice, adding more salt or spices if needed.

Final Touches: Let the chili sit for another 15-30 minutes on low heat, allowing the flavors to meld together.

Serve: Ladle into bowls and garnish with fresh cilantro and your choice of toppings, such as avocado, shredded cheese, or crushed tortilla chips.
