4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tablespoons unsalted butter

6 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Zest of 1 lemon (optional)

Prep the Potatoes: Start by preheating your oven to 400°F (200°C). In a large oven-proof skillet, add the halved baby potatoes and drizzle with olive oil. Season with salt, pepper, thyme, and rosemary. Toss until the potatoes are well coated.

    Roast the Potatoes: Place the skillet in the preheated oven and roast the potatoes for 20-25 minutes, or until golden and tender, stirring halfway through.

      Cook the Chicken: While the potatoes are roasting, season the chicken thighs generously with salt and pepper. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken thighs and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Make the Creamy Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the skillet.
