Ingredients

For the Meatballs:

1 lb (450g) ground chicken

1/2 cup bread crumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

Salt and pepper to taste

For the Creamy Garlic Butter Sauce:

4 tbsp unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, for garnish

Instructions

Prepare the Meatballs:

    - In a large bowl, combine the ground chicken, bread crumbs, grated Parmesan, chopped parsley, minced garlic, egg, oregano, salt, and pepper. Mix until all the ingredients are fully incorporated.

      - Form the mixture into small meatballs, about 1-2 inches in diameter.

        Cook the Meatballs:

          - In a large skillet, heat a drizzle of olive oil over medium heat. Add the meatballs in batches, being careful not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides and cooked through. Transfer the cooked meatballs to a plate and set aside.

Make the Creamy Garlic Butter Sauce:

              - In the same skillet, reduce the heat to low and add the unsalted butter. Once melted, add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

                - Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

                  - Stir in the grated Parmesan cheese and dried thyme. Continue to simmer for about 3-5 minutes, or until the sauce thickens slightly. Season with salt and pepper to taste.

                    Combine:

                      - Return the meatballs to the skillet, gently stirring them into the creamy garlic butter sauce to coat evenly. Let them simmer in the sauce for an additional 2-3 minutes until heated through.

                        Serve:

                          - Garnish with fresh parsley and serve hot over cooked pasta, rice, or with crusty bread to soak up the delicious sauce.
