Ingredients

4 boneless skinless chicken thighs

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 tablespoon lemon juice (for a hint of acidity)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season them on both sides with salt and pepper.

Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once sizzling, add the chicken thighs and sear for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to combine. Scrap any bits stuck to the bottom of the pan for added flavor.

Incorporate Seasonings: Stir in the Dijon mustard, Italian seasoning, and optional lemon juice. Bring the sauce to a simmer and let it cook for 3-5 minutes until slightly thickened.

Reintroduce Chicken: Return the seared chicken thighs to the skillet, spooning some of the sauce over them. Let them simmer in the sauce for an additional 5 minutes to absorb flavor.

Garnish and Serve: Remove the skillet from heat. Garnish with chopped fresh parsley. Serve the creamy garlic butter chicken thighs over your favorite sides like mashed potatoes, pasta, or steamed vegetables.
