1 lb (450g) chicken breast, diced into bite-sized pieces

12 oz (340g) rotini pasta

4 tbsp unsalted butter

6 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

1 tsp Italian seasoning

½ tsp red pepper flakes (optional for heat)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

      Sauté the Chicken:

        - In a large skillet over medium heat, melt 2 tablespoons of butter. Season the diced chicken with salt and pepper, then add to the skillet. Cook the chicken for 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

          Prepare the Garlic Butter Sauce:

            - In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn).

              Make it Creamy:

                - Pour in the chicken broth and bring it to a low simmer. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Allow the mixture to simmer for 3-5 minutes until it slightly thickens.

                  Add Cheese:

                    - Stir in the Parmesan cheese, mixing until melted and well combined. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

                      Combine:

                        - Return the cooked chicken to the skillet. Toss in the cooked rotini, ensuring that everything is well-coated with the creamy sauce. Adjust the seasoning with salt and pepper to taste.
