Creamy Garlic Chicken & Spinach Bake

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup heavy cream

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Spinach: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Remove from heat and set aside.

      Prepare the Chicken: In the same skillet, add the remaining olive oil and butter. Season the chicken breasts with salt, pepper, paprika, and Italian seasoning. Sear the chicken for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and place it in a greased baking dish.

        Make the Creamy Sauce: In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring continuously. Add half of the mozzarella and Parmesan cheese, and mix until melted and smooth. Season with additional salt and pepper to taste.

          Combine Ingredients: Stir the sautéed spinach into the creamy garlic sauce. Pour the spinach and sauce evenly over the chicken breasts in the baking dish. Top with the remaining mozzarella and Parmesan cheese.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
