Creamy Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 tablespoon unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon onion powder

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Chicken Thighs: Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.

    Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter is melted and the oil is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes or until the skin is golden brown and crispy. Flip the thighs and cook for another 5 minutes. Remove the chicken from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute. Be careful not to burn the garlic.

        Add Cream and Broth: Pour in the chicken broth, scraping the bottom of the skillet to deglaze it. Then, slowly whisk in the heavy cream, and bring to a gentle simmer.

          Season the Sauce: Add the dried thyme, oregano, and onion powder. Stir to combine and let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly. Taste and adjust salt and pepper if needed.

            Return the Chicken: Nestle the seared chicken thighs back into the skillet, skin-side up. Spoon some of the sauce over the top. Cover the skillet with a lid and let it simmer on low heat for 15-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
