Creamy Garlic Parmesan Chicken Pasta

12 oz fettuccine or your pasta of choice

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups fresh spinach, roughly chopped

1 tablespoon fresh parsley, finely chopped (for garnish)

Optional: red pepper flakes for added heat

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken pieces and season with salt and pepper. Cook for about 6-8 minutes, or until the chicken is thoroughly cooked and golden brown. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.

        Make the Cream Sauce: Lower the heat to medium and pour in the heavy cream. Stir to combine with the garlic, then add the grated Parmesan cheese and Italian seasoning. Stir continuously until the cheese has melted and the sauce is smooth and creamy.

          Combine Ingredients: Add the cooked chicken back into the skillet and fold in the fresh spinach, allowing it to wilt. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
