Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt, to taste

Pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-7 minutes, until the skin is golden brown and crispy. Flip the chicken and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.

Sauté Garlic: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 1 minute, or until fragrant (be careful not to burn it).

Make the Creamy Sauce: Pour in the heavy cream, stirring to combine with the garlic. Bring to a simmer, then add the grated Parmesan cheese and the Italian herbs. Stir continuously until the cheese has melted and the sauce is smooth.

Return the Chicken: Reduce the heat to low and return the seared chicken thighs to the skillet. Spoon the creamy sauce over the chicken. Cover the skillet and cook for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

Garnish and Serve: Once cooked, remove the skillet from heat. Garnish with fresh parsley. Serve the creamy garlic Parmesan chicken thighs over pasta, rice, or alongside steamed veggies to soak up that luscious sauce.
