Ingredients

500g gnocchi (store-bought or homemade)

2 cups fresh spinach, chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Pinch of red pepper flakes (optional)

Fresh basil for garnish (optional)

Instructions

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Once done, drain and set aside.

Sauté Garlic: In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

Add Spinach: Slowly add the chopped spinach to the skillet, stirring frequently until it wilts and reduces in volume, approximately 2-3 minutes. Season with a pinch of salt and pepper.

Make the Creamy Sauce: Reduce the heat to low, and pour the heavy cream into the skillet. Stir well, allowing it to simmer gently for about 2-3 minutes. Then, mix in the grated Parmesan cheese until melted and smooth.

Combine Gnocchi and Sauce: Carefully add the cooked gnocchi to the skillet, gently folding it into the creamy garlic spinach sauce. Ensure all gnocchi are well coated. If the sauce is too thick, you can add a splash of pasta water to reach your desired creaminess.

Final Seasoning: Taste and adjust seasoning with additional salt, pepper, and red pepper flakes if you like a bit of heat.

Serve: Serve hot, garnished with fresh basil and extra Parmesan cheese, if desired.
