8 ounces of fettuccine pasta

4 cups fresh spinach

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Spinach: Add the fresh spinach to the skillet and cook for about 2-3 minutes, stirring occasionally, until the spinach wilts down.

        Make the Sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, slowly add some reserved pasta water until you reach your desired consistency.

          Season: Season the sauce with salt, pepper, red pepper flakes (if using), and lemon juice. Stir well to combine.

            Combine Pasta and Sauce: Add the cooked fettuccine to the creamy garlic spinach sauce. Toss until the pasta is well-coated in the sauce. If needed, add more pasta water to loosen the sauce.

              Serve: Plate the creamy garlic spinach pasta, and garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve warm.
