Creamy Garlic White Bean Dip

Ingredients
  

2 cans (15 oz each) of cannellini beans, drained and rinsed

4 cloves of garlic, peeled

1/4 cup tahini

1/4 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

Salt and black pepper, to taste

Fresh parsley, finely chopped, for garnish

Red pepper flakes, for garnish (optional)

Pita chips or fresh veggies, for serving

Instructions
 

Prepare Garlic: In a small saucepan, combine the peeled garlic cloves and cover them with water. Bring to a boil over medium heat, then reduce the heat and simmer for about 10 minutes until the garlic is tender. Drain and set aside.

    Blend Ingredients: In a food processor, add the drained cannellini beans, cooked garlic, tahini, olive oil, lemon juice, ground cumin, and a pinch of salt and black pepper. Pulse until the mixture is smooth and creamy. If the dip is too thick, add a tablespoon of water at a time until your desired consistency is achieved.

      Taste and Adjust: Give the dip a taste and adjust the seasoning as needed, adding more salt, pepper, or lemon juice according to your preference.

        Serve: Transfer the garlic white bean dip to a serving bowl. Drizzle a bit of extra-virgin olive oil on top, sprinkle with chopped parsley, and add a dash of red pepper flakes for a touch of heat if desired.
