Ingredients

2 cups frozen or fresh corn kernels

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup mayonnaise

2-3 fresh jalapeños, seeds removed and finely chopped (adjust based on spice preference)

1/4 cup chopped fresh cilantro (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Tortilla chips or fresh veggies for serving

Instructions

Prepare the Corn: If using frozen corn, thaw it and drain any excess moisture. If using fresh corn, cook the corn on the cob for about 3-4 minutes in boiling water, cool, and then cut off the kernels.

Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, cheddar cheese, and mayonnaise. Use a hand mixer or spatula to blend until smooth and creamy.

Add The Flavor: Stir in the chopped jalapeños, corn, garlic powder, onion powder, and cilantro (if using). Mix well until all ingredients are evenly distributed.

Season It: Taste the mixture and add salt and pepper as needed to enhance the flavors. Adjust the amount of jalapeños for desired heat level.

Chill: Transfer the dip to a serving dish and cover with plastic wrap. Refrigerate for at least 1 hour to allow the flavors to meld together. For best taste, chill overnight.

Serve: Serve the dip cold or at room temperature with tortilla chips or fresh vegetables like bell peppers, celery sticks, or carrot sticks.
