4 boneless, skinless chicken breasts

1 cup cream cheese, softened

½ cup grated Parmesan cheese

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon olive oil

Salt and pepper to taste

1 cup fresh spinach leaves

1 cup panko breadcrumbs

2 tablespoons melted butter (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness (about ½ inch thick) to ensure even cooking.

        Make the Filling:

          - In a medium bowl, combine the softened cream cheese, Parmesan cheese, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper. Mix until well combined and creamy.
