Creamy Lemon Garlic Orzo

1 cup orzo pasta

4 cups vegetable broth (or chicken broth)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

Zest of 1 large lemon

Juice of 1 large lemon

1 cup spinach (fresh or frozen, thawed and drained)

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a medium pot, bring the vegetable (or chicken) broth to a boil. Add the orzo pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving a cup of the broth.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes, until translucent. Then add the minced garlic and sauté for another 1-2 minutes until fragrant, making sure not to burn the garlic.

      Add Cream and Citrus: Lower the heat and pour in the heavy cream, stirring constantly. Add the lemon zest and lemon juice, mixing well to combine. Let the mixture simmer for about 2-3 minutes to thicken slightly.

        Combine Ingredients: Add the cooked orzo and spinach to the skillet, stirring gently to combine everything. If the mixture seems too thick, gradually add a little reserved broth until your desired creamy consistency is achieved.

          Finish with Cheese: Stir in the grated Parmesan cheese, allowing it to melt and blend into the sauce. Season generously with salt and black pepper to taste.

            Serve: Once everything is creamy and heated through, remove from heat. Serve warm, garnished with fresh chopped parsley for a burst of color and flavor.
