Creamy Mushroom Chicken and Wild Rice Soup

Ingredients
  

1 lb boneless, skinless chicken breasts, diced

1 cup wild rice, rinsed

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups mushrooms, sliced (cremini or button)

3 carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 cup heavy cream

2 teaspoons dried thyme

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced chicken and sauté until it’s golden brown and cooked through, about 5-7 minutes. Remove the chicken and set it aside.

    In the same pot, add the onion, garlic, mushrooms, carrots, and celery. Sauté for about 5-6 minutes, until the vegetables are tender and the mushrooms have released their moisture.

      Stir in the wild rice, chicken broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 25-30 minutes, or until the wild rice is tender.

        Once the rice is cooked, stir in the heavy cream and the sautéed chicken. Let it simmer for an additional 5 minutes to heat through.

          Adjust seasoning with more salt and pepper if necessary.

            Remove from heat and garnish with fresh parsley before serving.
