1 lb (450g) potato gnocchi

2 cups fresh mushrooms (cremini or button), sliced

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi:

    - In a large pot of boiling salted water, add the potato gnocchi. Once they float to the surface (about 2-3 minutes), they are done. Use a slotted spoon to transfer them to a plate and set aside.

      Sauté the Mushrooms:

        - In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.

          - Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are golden brown and the moisture has evaporated.

            Add Garlic and Thyme:

              - Reduce the heat to medium and add the minced garlic and thyme to the skillet with the mushrooms. Sauté for another minute until fragrant.

                Make the Cream Sauce:

                  - Pour in the heavy cream and bring to a gentle simmer. Stir frequently until the cream thickens slightly, about 3-4 minutes.

                    - Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste.

                      Combine Gnocchi with Sauce:

                        - Carefully fold the cooked gnocchi into the creamy mushroom sauce.

                          - Add the remaining tablespoon of butter to enhance the flavor, stirring until well combined and heated through.
