Ingredients

6 ripe peaches, pitted and chopped (about 4 cups)

1 cup coconut milk (or dairy milk for a creamier texture)

1 cup vegetable broth

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

1 tablespoon honey or maple syrup (adjust for sweetness)

Juice of 1 lime

Salt and pepper to taste

Fresh mint leaves for garnish

Optional: A pinch of cayenne pepper for heat

Instructions

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional minute until fragrant.

Cook the Peaches: Stir in the chopped peaches and cook for 3-4 minutes, allowing them to soften and release their juices.

Add Liquids: Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gently simmer over medium-high heat.

Season: Add the honey (or maple syrup), lime juice, and season with salt and pepper to taste. If you like a bit of heat, sprinkle in a pinch of cayenne pepper. Stir well.

Blend the Soup: Once the soup is heated through, use an immersion blender to puree until smooth. If you prefer a chunkier texture, blend only half of the soup and mix back in the rest.

Taste and Adjust: Taste the soup and adjust the seasoning as needed. If it’s not sweet enough, add more honey or syrup; if it’s too thick, add a bit more broth or coconut milk.

Chill (Optional): For a refreshing take, let the soup cool at room temperature, then refrigerate for at least 30 minutes before serving.

Serve: Ladle the creamy peach soup into bowls and garnish with fresh mint leaves for a pop of color and flavor. Enjoy this dish cold or warmed up, as desired!
