Ingredients

12 oz fettuccine pasta

1 cup pure pumpkin puree (canned or homemade)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon nutmeg

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Additional Parmesan cheese (for serving)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Make the Sauce: Lower the heat and add the pumpkin puree to the skillet, stirring to combine with the garlic. Gradually pour in the heavy cream, mixing until smooth. Cook for about 3-4 minutes, allowing the mixture to gently simmer.

Add Cheese & Season: Stir in the grated Parmesan cheese, Italian seasoning, nutmeg, salt, and pepper. Keep stirring until the cheese is melted and the sauce is creamy. If the sauce seems too thick, gradually add the reserved pasta water until you reach your desired consistency.

Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing it gently to coat with the creamy pumpkin sauce. Allow it to cook for an additional 2-3 minutes to heat through.

Serve: Plate the pasta and garnish with freshly chopped parsley and additional Parmesan cheese. Enjoy your delightful Creamy Pumpkin Alfredo Pasta!
