Creamy Roasted Cauliflower Soup

1 large head of cauliflower, cut into florets

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a non-vegan option)

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

Juice of 1 lemon

Fresh chives or parsley for garnish

Roast the Cauliflower: Preheat your oven to 425°F (220°C). Arrange the cauliflower florets on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with a pinch of salt and pepper. Roast in the oven for about 25-30 minutes, or until the cauliflower is golden and tender.

    Sauté the Aromatics: In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until softened and translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Combine and Simmer: Add the roasted cauliflower to the pot with the onions and garlic. Pour in the vegetable broth and bring to a simmer. Stir in the ground cumin, salt, pepper, and nutmeg. Let it simmer for about 15 minutes to allow the flavors to meld.

        Blend to Creaminess: Using an immersion blender, blend the soup until smooth and creamy. If you prefer, transfer the soup in batches to a countertop blender, then return it to the pot.
