Creamy Roasted Red Pepper Orzo

1 cup orzo pasta

2 large red bell peppers

1 tablespoon olive oil

2 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish

Optional: a splash of lemon juice for brightness

Roast the Peppers: Preheat your oven to 400°F (200°C). Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking sheet. Drizzle with olive oil and roast in the oven for about 25-30 minutes, or until the skins are blistered and charred. Remove and let cool before peeling off the skins.

    Cook the Orzo: While the peppers are roasting, bring a medium pot of salted water to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.
