Creamy Roasted Red Pepper Pasta

12 oz fettuccine or pasta of choice

2 large red bell peppers, roasted

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: red pepper flakes for heat

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally, until the skins are charred and blistered. Once done, place the peppers in a bowl and cover with plastic wrap for about 10 minutes to steam. This helps loosen the skin. After steaming, peel the skins off, remove the seeds, and set aside.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining and set the pasta aside.

      Make the Sauce: In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 2 minutes until fragrant.

        Blend the Peppers: In a blender, combine the roasted red peppers and sautéed garlic with the heavy cream, Italian seasoning, salt, and pepper. Blend until smooth and creamy. If you like your sauce a bit spicier, add the red pepper flakes to the blender as well.

          Combine Ingredients: Pour the roasted red pepper sauce back into the skillet over medium heat. Stir in the cooked pasta and mix until well combined. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust with extra salt and pepper if needed.

              Serve: Plate the pasta and garnish with fresh basil leaves. Add additional Parmesan on top if desired, and enjoy your delicious creamy roasted red pepper pasta!
