Creamy Roasted Red Pepper Pasta

12 oz (340g) pasta of your choice (fettuccine, penne, or spaghetti)

2 large red bell peppers

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Roast the Red Peppers: Preheat your oven to 400°F (200°C). Place the red bell peppers on a baking sheet and drizzle with olive oil. Roast for about 25-30 minutes, or until the skin is charred and blistered. Remove from the oven and let cool for a few minutes. Peel off the skin, remove the stems and seeds, and set aside.

    Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

      Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Sauté the chopped onion until it becomes translucent, about 5 minutes. Add the minced garlic and Italian seasoning, and cook for an additional minute until fragrant.

        Make the Sauce: In a blender or food processor, combine the roasted red peppers, sautéed onion and garlic, heavy cream, and vegetable broth. Blend until smooth. Pour the mixture into the skillet, and bring to a gentle simmer over medium-low heat. Stir in the grated Parmesan cheese until melted and well combined. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Toss the Pasta: Add the cooked pasta to the skillet and toss to coat thoroughly in the creamy sauce. Season with salt and pepper to taste.

            Serve: Plate the pasta, garnish with freshly torn basil leaves, and sprinkle with additional Parmesan cheese if desired. Enjoy!
