Ingredients

2 lbs ripe tomatoes (heirloom or vine-ripened), quartered

1 large onion, diced

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional for heat)

3 cups vegetable broth

1 cup heavy cream (substitute with coconut cream for a vegan option)

2 tablespoons balsamic vinegar

Fresh basil leaves, for garnish

Instructions

Roast the Tomatoes and Veggies: Preheat your oven to 425°F (220°C). On a large baking sheet, toss the quartered tomatoes, diced onion, and minced garlic with olive oil, salt, pepper, thyme, smoked paprika, and red pepper flakes. Spread the mixture evenly on the sheet. Roast in the oven for about 25-30 minutes, or until the tomatoes are caramelized and veggies are tender.

Blend the Mixture: Once roasted, carefully transfer the mixture to a blender (or use an immersion blender). Add vegetable broth and balsamic vinegar. Blend until smooth and creamy. If you prefer a chunkier texture, pulse the blender a few times instead of blending fully.

Heat the Bisque: In a large pot over medium heat, pour the blended tomato mixture. Bring it to a gentle simmer and reduce the heat. Stir in the heavy cream (or coconut cream) and let it heat through for about 5 minutes. Adjust seasoning with additional salt and pepper if needed.

Serve: Ladle the bisque into bowls, and drizzle a little extra cream on top for an elegant touch. Garnish with fresh basil leaves.

Enjoy: Serve your creamy roasted tomato bisque with crusty bread or grilled cheese for dipping.
