Creamy Roasted Tomato Pasta

2 pints cherry tomatoes

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

1 cup vegetable broth

1 cup heavy cream

12 ounces pasta (spaghetti or penne work great)

1 cup freshly grated Parmesan cheese

½ cup fresh basil, chopped (plus more for garnish)

Zest and juice of 1 lemon

Toasted pine nuts for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, until they are blistered and caramelized.

      Sauté Garlic: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

        Make the Cream Sauce: Carefully pour in the vegetable broth and bring it to a simmer. Let it cook for 3-4 minutes. Lower the heat, then stir in the heavy cream, followed by the roasted tomatoes. Mix everything well and allow it to simmer on low heat for another 5 minutes.

          Cook the Pasta: In a large pot of boiling salted water, cook pasta according to package instructions until al dente. Reserve about ½ cup of pasta cooking water, then drain the pasta.

            Combine Pasta and Sauce: Add the drained pasta to the skillet with the creamy sauce. Stir well to coat the pasta, adding reserved pasta water as needed to reach desired creaminess.
