Creamy Roasted Veggie Pasta

8 oz (225g) pasta (penne or fusilli work well)

2 cups mixed vegetables (zucchini, bell peppers, and cherry tomatoes)

1 medium red onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

1 cup heavy cream or a dairy-free alternative

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, toss the mixed vegetables and red onion with olive oil, minced garlic, salt, pepper, and Italian seasoning until evenly coated.

      Roast the Vegetables: Spread the vegetable mixture onto a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the veggies are tender and slightly caramelized, tossing halfway through for even roasting.

        Cook the Pasta: While the vegetables roast, cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

          Make the Creamy Sauce: In a large skillet over medium heat, combine the heavy cream and grated Parmesan cheese. Stir until the cheese melts and the sauce is creamy. If needed, add reserved pasta water to reach desired consistency.
