12 oz (340g) penne pasta

1 cup (240ml) heavy cream

1 cup (240g) cream cheese, softened

1 cup (100g) shredded mozzarella cheese, plus more for topping

1 cup (100g) grated Parmesan cheese

1 can (14 oz or 400g) artichoke hearts, drained and chopped

2 cups (60g) fresh spinach, roughly chopped

2 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

1/2 tsp red pepper flakes (optional for spice)

Salt and pepper, to taste

1/4 cup (60ml) vegetable broth or pasta water (for thinning sauce)

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente, according to package directions. Drain and set aside.

      Prepare the Creamy Sauce: In a large mixing bowl, combine the heavy cream, cream cheese, 1 cup of mozzarella cheese, and 1/2 cup of Parmesan cheese. Mix until smooth and creamy.

        Add Veggies and Seasoning: Stir in the chopped artichoke hearts, fresh spinach, minced garlic, onion powder, garlic powder, red pepper flakes (if using), salt, and pepper. Mix well to combine. If the mixture appears too thick, add the vegetable broth or reserved pasta water, a little at a time, until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the creamy vegetable sauce, stirring gently until the pasta is well coated.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread evenly.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the pasta.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden.
