Creamy Spinach Mushroom Pasta

8 oz (225g) pasta (fettuccine or linguine recommended)

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the rest. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they become golden brown and soften.

      Add Garlic and Spinach: Stir in the minced garlic and cook for an additional minute until fragrant. Then, add the chopped spinach and cook until it wilts, about 2-3 minutes.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese. Mix until the cheese has melted and the sauce becomes creamy. If the sauce is too thick, add some reserved pasta water, a tablespoon at a time, until you reach your desired consistency.

          Season: Season the sauce with salt, black pepper, and red pepper flakes (if using). Stir until everything is well combined.

            Combine Pasta and Sauce: Add the drained pasta directly to the skillet with the creamy sauce. Toss everything together until the pasta is fully coated with the sauce.

              Serve: Divide the creamy spinach mushroom pasta into bowls and garnish with freshly chopped parsley. Serve immediately and enjoy!
