Creamy Sun-Dried Tomato Chicken Pasta

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes packed in oil, drained and sliced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 cup grated Parmesan cheese

8 ounces pasta (fettuccine or penne works well)

Fresh basil, for garnish

Prep the Chicken: Season the chicken breasts on both sides with salt and pepper.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest before slicing into strips.

        Make the Sauce: In the same skillet, lower the heat to medium. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the sliced sun-dried tomatoes and cook for another 2-3 minutes.

          Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring well. Add Italian seasoning and let the sauce simmer for 5 minutes until it starts to thicken.

            Incorporate Cheese: Stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

              Combine Pasta and Chicken: Add the cooked pasta and sliced chicken to the skillet, tossing to coat everything in the creamy sauce. Let it simmer for a couple of minutes on low heat until everything is heated through.
