1 lb (450g) potato gnocchi (store-bought or homemade)

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for serving)

3 garlic cloves, minced

1 small onion, finely chopped

2 cups fresh spinach (or arugula)

2 tablespoons olive oil

1 teaspoon dried Italian herbs (oregano, basil, or thyme)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the potato gnocchi and cook according to package instructions, typically until they float to the surface, about 2-3 minutes. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and dried Italian herbs. Cook for about 2-3 minutes, allowing the flavors to meld together.

        Make the Cream Sauce: Pour in the heavy cream, stirring to combine. Bring to a gentle simmer and let it thicken for about 3-4 minutes. Whisk in the grated Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste.
