Creamy Sweet Corn & Avocado Tostadas

1 can (15 oz) sweet corn, drained and rinsed

1 ripe avocado, halved and pitted

1/2 cup Greek yogurt or sour cream

1 lime, juiced and zested

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

4 tostada shells

1/2 cup crumbled feta cheese (optional)

1/4 cup fresh cilantro, chopped

Cherry tomatoes, halved (for garnish)

Sliced radishes (for garnish)

Instructions
 

Prepare the Corn Mixture: In a medium bowl, combine the drained sweet corn with half of the lime juice and zest, cumin, chili powder, salt, and pepper. Toss well to evenly coat the corn with the seasoning.

    Mash the Avocado: In another bowl, scoop out the avocado flesh and add the remaining lime juice and zest. Use a fork to mash the avocado until creamy but still a little chunky. Season with salt to taste.
