4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 (14-ounce) can diced tomatoes, with juices

1 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese

1 tablespoon balsamic vinegar

Freshly grated Parmesan cheese, for serving

Cooked pasta or rice, for serving (optional)

Instructions
 

Prep the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it!

        Add Tomatoes and Cream: Pour in the diced tomatoes (with juices) and heavy cream. Stir to combine, bringing the mixture to a gentle simmer.

          Season the Sauce: Add the chopped basil, Italian seasoning, and balsamic vinegar to the skillet. Stir well and let it simmer for about 5 minutes to slightly thicken.

            Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the sauce over them so they're well-coated. Allow them to simmer together for an additional 5-7 minutes.
