Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup fresh spinach leaves

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions

Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Sear the salmon for about 4-5 minutes per side until golden and cooked through. Remove from the skillet and set aside.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they begin to soften.

Create the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Bring it to a gentle simmer, then add the grated Parmesan cheese and dried Italian seasoning. Mix until the cheese is melted and the sauce is creamy.

Add Spinach: Stir in the fresh spinach leaves, allowing them to wilt into the sauce for about 2 minutes. If the sauce is too thick, you can add a splash of vegetable or chicken broth to reach your desired consistency.

Combine Salmon with Sauce: Return the seared salmon fillets to the skillet, spooning some of the creamy sauce over the top. Let it simmer for an additional 2-3 minutes to heat the salmon through.

Garnish and Serve: Remove from heat, garnish with fresh basil leaves if desired, and serve with lemon wedges on the side for an extra zing. Enjoy this dish with a side of pasta, rice, or crusty bread to soak up the delicious creamy sauce!
