Creamy Tuscan Shrimp Linguine

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Juice of 1 lemon

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

    Sauté Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt and pepper. Sauté for 2-3 minutes, flipping halfway, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant. Add the cherry tomatoes, cooking until they soften and burst, about 3-4 minutes.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.

          Make It Creamy: Lower the heat, then stir in the heavy cream and Parmesan cheese. Continue stirring until the cheese melts and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.

            Combine: Return the sautéed shrimp to the skillet and toss to coat them in the creamy sauce. Add the cooked linguine, mixing everything gently until the pasta is well-coated and heated through.

              Finish with Flavor: Add lemon juice to the dish, adjusting seasoning with more salt and pepper if needed.

                Serve: Plate the pasta and shrimp, garnishing with fresh basil leaves and a sprinkle of extra Parmesan if desired.
