8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp sun-dried tomatoes, chopped

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta:

    Boil a large pot of salted water and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

      Sauté the Shrimp:

        In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Create the Sauce:

            In the same skillet, add more olive oil if necessary, and sauté the garlic for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

              Add Spinach and Cream:

                Stir in the fresh spinach and let it wilt. Then pour in the heavy cream, bring to a simmer, and gradually mix in the grated Parmesan. Stir until the cheese is melted and the sauce is smooth.

                  Combine Ingredients:

                    Add the cooked fettuccine to the skillet, then fold in the sun-dried tomatoes and Italian seasoning. If the sauce is too thick, add reserved pasta water a little at a time until you achieve your desired consistency.

                      Finish with Shrimp:

                        Return the sautéed shrimp to the skillet, stirring to combine everything well. Taste and adjust seasoning with salt and pepper if needed.

                          Serve:
