4 cups of seedless watermelon, cubed

1 cup of crumbled feta cheese

1/2 cup of Greek yogurt

2 tablespoons of honey (or maple syrup for a vegan option)

1 tablespoon of fresh mint leaves, chopped (plus extra for garnish)

1 tablespoon of lime juice

A pinch of salt

6-8 popsicle molds and sticks

Prepare Watermelon: Start by cutting the seedless watermelon into cubes and placing them in a blender. Blend until smooth, then strain the watermelon juice through a fine mesh sieve to remove any pulp, if desired. You'll need about 2 cups of juice.

    Mix Ingredients: In a mixing bowl, combine the strained watermelon juice with crumbled feta cheese, Greek yogurt, honey (or maple syrup), fresh mint, lime juice, and a pinch of salt. Stir until the mixture is creamy and well combined.

      Fill Popsicle Molds: Carefully pour the creamy mixture into the popsicle molds, leaving a little space at the top for expansion as they freeze.

        Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered and standing upright.

          Freeze: Transfer the filled molds to the freezer and freeze for at least 4-6 hours or until fully set.

            Release and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy! Garnish with additional chopped mint leaves if desired.
